Bloody Dock (Rumex sanguineus) - Edible Perennial Foliage Plant
About This Plant
Bloody Dock, or Red-Veined Dock, is an edible perennial grown as a colorful foliage plant and as a zesty salad green. It features green, lance-shaped leaves forming a rosette up to 18 inches tall and wide, with bright reddish-purple veins. In late spring to early summer, 2-3 foot tall flower spikes with copper-colored, star-shaped flowers appear but are typically removed to maintain bushier rosette growth.
Native to Europe, southwest Asia, and northern Africa, Bloody Dock naturalizes in parts of the U.S. and Canada. It thrives in full sun to partial shade in rich, moist, well-draining organic soil and can be grown at a pond’s edge. It is a perennial in hardiness zones 4–8 and can be grown as an annual in other areas.
